Gingerbread Recipe with Crystallized Ginger

Ingredients

For the Gingerbread:
- ½ cup (1 stick) unsalted butter, softened
- ¾ cup dark brown sugar, lightly packed
- ¼ cup molasses
- 1 large egg
- 2 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ½ teaspoon salt
- ½ cup hot water
- ½ cup crystallized ginger, finely chopped

Instructions

1. Preheat oven to 350°F. Grease a 9x13-inch baking pan; set aside.
2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the molasses and egg until blended. In a separate bowl, whisk together the flour, baking powder, ground ginger, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the hot water. Stir in the crystallized ginger.
3. Spread the batter evenly into the prepared pan. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean. Cool completely in the pan before cutting into bars. Enjoy!
